We stock a few different local milks: cow’s milk, raw cow’s milk, two kinds of goat’s milk as well as a kefir milk from Co Leitrim.
All of our milk is non-homogenised and full fat. Put very simply, homogenising milk disperses the fat evenly throughout the milk, so that the cream does not sit on top. It also decreases the size of the fat particles overall. Leaving the milk as non-homgenised allows the cream to sit on top, and lets the milk keep its lovely creamy colour aswell.
